The paper presents the results of studies on the content of total lipids, phospholipids and total lipids’ fatty acid composition of Shaver-579 breeding hens’ liver, egg yolk and 19 days embryo’s liver. The reverse dependence is established between the content of unsaturated fatty acids in lipids of egg yolk and intensity index of lipid metabolism in the liver of 19 days embryo.

Key words: carotenoids, fatty acids, phospholipids, total lipids, the intensity index of lipid metabolism.
